To celebrate Pancake Day on the 21st of February 2023, also known as Shrove Tuesday, local Stratford-Upon-Avon sweet shop Lily's Waffles have shared their perfect French crepe recipe with us! If you enjoy thin, light crepes why not try this fool-proof recipe on Pancake Day this year? 

French crepe recipe :

Ingredients:

- 50g melted butter

- 600g milk 

- 250g plain flour

- 4 eggs

- 1 pinch of salt

Method:

1) Mix all of the ingredients in a bowl to the consistency of liquid cream.

2) Leave the batter to rest for at least 30 minutes.

3) Lightly grease a non stick frying pan with butter.

4) Cook each crepe for 2-3 minutes, turn it over and cook for a further 1 minute. 

Serving ideas: 

 1) Lily's best seller-a classic sweet crepe with Nutella and fresh strawberries. 

 2) A savoury lunch crepe filled with cheddar and smoked ham.
